FAVE PALEO RECIPES:

Pumpkin Chicken over Spaghetti Squash: Cook chicken. Mix 1 & 1/2 large cans of pumpkin, 1 jar of organic marinara (no sugar), 1 cup of almond milk, basil, parsley, salt, garlic, cinnamon, nutmeg, pumpkin spice, and oregano to taste. Toss chicken in sauce. Slice a spaghetti squash into two and put 1/2 face down in a casserole dish, bake at 450 for roughly 25-30 min or until water boils and scrape out inside of squash. It is spaghetti like and super tasty!

Avocado based chicken salad: (BLEND 2 avocados, lots of fresh basil, pepper, fresh garlic, balsamic vinegar, EVO, garlic, parsley, and oregano in a food processor or mini mixer then transfer sauce to a bowl and toss in 3 shredded chicken breasts and two hearty tomatoes cut up and throw it over mixed greens…YUMMY!!

Paleo Pancakes for one: Mash up one banana, with two eggs and a scoop of almond butter and whisk. Add cinnamon, nutmeg and blueberries if you wish! Then cook just like a pancake! YUMMY!

Chicken, Peppers & Onions Marinara: Cube chicken, slice and dice peppers and onions and add in an organic tomato sauce or make your own!  Slice a spaghetti squash into two and put 1/2 face down in a casserole dish, bake until water boils and scrape out inside of squash. It is spaghetti like and super tasty!

Paleo Broccoli, Chicken, Bacon Alfredo: Slice a spaghetti squash into two and put 1/2 face down in a casserole dish, bake until water boils and scrape out inside of squash. It is spaghetti like and super tasty! Cook 2 chicken breasts and cube or use shrimp instead. Cook 7 pieces of nitrate free bacon with no preservatives and cut up. Mix in a bowl 1 cup coconut milk from the can, 3 tsp basil, 3 tsp parsley, 2 tsp garlic, 2 tsp oregano, 1 tsp thyme, 1 head of broccoli florets, and pepper to taste. You can bake this at 375 for 30-min, but I threw all the ingredients into a pan with a touch of coconut oil and stir fried it up. I did not follow the recipe with the spices…I LOADED them in! After the 🙂 After the chicken was cooked and the broccoli was soft I threw the entire concoction over the spaghetti squash! YUMMY!!

Crockpot Venison Roast: Throw 3-4lb venison roast, 1 onion, celery, carrots, mini tomatoes, 2 bay leaves, 1 garlic clove, bacon fat into the crockpot. Then mix 4 Tb apple cider vinegar, 1/8 cup olive oil, garlic, 2 TB Sesame oil, 1/2 TB dry mustard, parsley, basil, pepper, and garlic powder. Poke holes in the meat and pour on the marinade. Crockpot for 6 hours. YUMMY!

PALEO COCONUT CHICKEN over mixed greens…YUM YUM!! Quick & Easy! I made this up! LOL!

chicken breasts, 2 local eggs, 1 t onion powder, 1/4 t garlic, 1/2 c coconut flour, 1/2 shredded unsweetened coconut,
1/2 c coconut oil, salt and pepper to taste

Method:

In a bowl combine coconut flour, shredded coconut, onion & garlic powders and some Salt & Pepper. Mix it up. Dip chicken breast in egg and then in mixture. In a saute pan, melt the coconut oil on medium heat and fry up chicken breast…DELISH! I put it onver mixed greens with a little bit of my home made balsamic dressing…:)

Paleo Creamer: 4 pitted dates, 1 can unsweetened coconut milk and cinnamon! AWESOME!!! 🙂

Paleo Milkshake: One cup unsweetened coconut milk, one cup unsweetened almond milk, one banana, chia seeds, a spoonful of almond butter, two pitted dates, unsweetened shredded coconut and ice! YUM YUM!!!

 

Day 1 of The CC Cleanse….

Breakfast: Power Smoothie-Kale, Parsley, Spinach, Flax Seed, Chia Seed, Coconut oil, 2 carrots, Broccoli, Water, a handful of mixed berries and I squeezed an orange in for flavor! Ill drink some now and some later!

Coffee-with unsweetened coconut milk and mashed up banana to sweeten it up. I realized last night I cannot have my fave flavored coffee for 30 days…YIKES!

So far Tommy John & Travis are on the cleansing train…hope they will last along with me! 

Lets see what the rest of the day will bring! 

Snacks: Two apples and cashews

Dinner: Chicken Fried Rice made with cauliflower instead of rice!:-) lots of veggies…cabbage, peppers, onions…

 

Day 2:

Power smoothie: Ground FLax seeds, chia seeds, kale, carrot, avocado, broccoli, a small handful of berries, water and an orange. I made enough to put 1/2 in a mason jar to take with me when I leave the house.

Snack: Cashews
Coffee: with homemade creamer (unsweetened coconut milk, cinnamon and dates).

A creature of habit I guess…Lunch: Salad with homemade Balsamic vinaigrette, fresh mixed greens, cashews, ground flax seed and chia seeds…I will get more adventurous as I go!

Snack: Peach

Yummy Paleo Dinner: Avocado based chicken salad (shredded chicken, 2 avocados, lots of fresh basil, pepper, fresh garlic, other seasonings and olive oil over mixed greens…YUMMY!!

Dessert: 1/2 of a banana and almond butter

Day 3:

Breakfast: Apple & Carrot Ginger Power Smoothie with broccoli, spinach and water:)

Coffee: Unsweetened Coconut milk, cinnamon and dates…

Snack: Peach

Lunch: Avocado based chicken salad (shredded chicken, 2 avocados, lots of fresh basil, pepper, fresh garlic, other seasonings and olive oil over mixed greens with cashews, ground Flax seed and chia seeds

Coffee: Unsweetened Coconut milk, cinnamon and dates…

Snack: Cantaloupe

Dinner: Spaghetti out of spaghetti squash with organic tomato sauce, chicken, peppers and onions! YUM YUM! It was DE-LISH!
Dessert: Local Cantaloupe! WHo knew it was grown locally

Cleanse Day 4:

Breakfast: Power Smoothie (Kale, Broccoli, Apple, Ground Flax, Chia and Almond Butter!

Coffee: Coconut milk, cinnamon and date creamer

Snack: Peach

Lunch: Fresh Garden Salad with lots of root veggies and a home made balsamic vinaigrette

Snack: Strawberries & Cantaloupe

Dinner: Local ground beef hamburger with Home made Paleo Ketchup, and tomato with Romaine Lettuce pieces, instead of bread

Dessert: Banana with almond butter

Cleanse Day 6:

Power Smoothie: Greens, greens, greens

Cashews, Apple

Coffee-home made creamer

Salad with tons of veggies, cashews and home made balsamic

Berries

Fresh Cod and asparagus

Day 7:

Eggs over easy and bacon over mixed greens

Coffee

Peach

“Paleo Fettuccini Alfredo” with Shrimp over spaghetti squash! YUMMMMMM!!!!

Breakfast for dinner! Banana & Blueberry pancakes for one person: 1 banana, 2 eggs, 1 scoop almond butter, cinnamon, nutmeg, and blueberries! YUMMY!!!

Banana Dark Chocolate Muffins

Serving Size: 12 muffins

INGREDIENTS

2 ripe bananas (about 1 ½ cups)
1 1/2 tablespoons maple syrup
1 teaspoon vanilla extract
4 eggs
½ cup coconut oil, melted
¼ cup coconut milk
½ cup coconut flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 tablespoons cacao powder
2 ounces dark chocolate (85% cacao and higher), chopped
INSTRUCTIONS

Preheat oven to 350 degrees. Line muffin tin with paper liners and set aside.
In a large bowl combine banana, maple syrup, vanilla extract, eggs, coconut oil, and coconut milk and using a hand mixer combine everything together until smooth.
In a small bowl, whisk together the coconut flour, baking soda, cinnamon, sea salt, and cacao powder. Add dry ingredients to the bowl with wet ingredients and using the hand mixer again mix together. With a spoon, stir in chopped dark chocolate.
Evenly spoon batter into prepared muffin tin.
Bake muffins for 25-30 minutes, rotating pan halfway through, until cake tester comes out clean. Transfer pan to a rack to cool for 10 minutes. Remove muffins from the pan and cool completely on rack.
